BAK 95 - Topics in Baking and Pastry Arts: Foundations of Baking and PastryCredit Hours: 3 Introduces students to theoretical aspects and application of basic preparations of baking and pastry related foods. Includes sanitation and safety, weights and measures, baking mathematics, baking and pastry specific tool usage, terminology, and concepts of high quality baked items, including convenience food products usage and production.
Lecture Hours: Lecture 1 hours per week. Recitation and Laboratory Hours: Laboratory 4 hours per week.
